Abstract
The field experiment was conducted during Rabi 2023-24 at research farm of Center of Excellence on Protected Cultivation and Precision Farming, IGKV, Raipur. These vegetables were also grown in open environment condition. Tomatoes are also found to be a wealthy source of Vitamin C which has the function of keeping the blood vessels healthy. Cauliflower is rich source of various nutrients such as vitamin A, vitamin C, riboflavin, thiamin, calcium, phosphorus, potassium, moisture, carbohydrates, proteins, fats and iron. Quality parameters in tomato varied between open field and polyhouse conditions. Total soluble solids (4.35°Brix), lycopene contents (4.62 Mg 100g-1), and ascorbic acid (25.42 mg 100g-1) in tomato were generally higher under protected environment, while fruit pH (4.52) and acid content (0.58%) were often higher in the open field. In cauliflower, curd expressed a creamy white colour, compact curd under protected environment. Total soluble solids (7.12 °Brix) and ascorbic acid content (54.43 mg 100g-1) in cauliflower were generally better under a protected environment than open field grown crop.
